Make A Meal Monday!

Fettucine Alfredo w/Grilled Chicken....YUM!



1/2 cup sweet butter
2 garlic cloves, minced OR 1 tsp garlic powder
2 cups heavy cream
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1 (16 ounce) box fettucine pasta

-Melt butter in medium saucepan over medium/low heat.
-Add the garlic, cream, white pepper and bring mixture to a simmer.
-Stir often.
-Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has
thickened and is smooth.
-When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR
FREQUENTLY.
-While the sauce cooks, boil noodles for 3-5 minutes.
-Place pasta on serving plates and spoon sauce over pasta.

Stir in Grilled chicken.

This is such a YUMMY recipe! I was looking for an alfredo sauce recipe and came across this one. I switched it up just a tad though. The first time I cooked it, the garlic came across quite strong, so the 2nd time, I substituted garlic powder instead and found that it was much more appealing to my taste buds. Also, the original recipe did not call for salt but I found that it lacked some flavor and salt was just what it needed. Give it a try...you won't be disappointed!

That's one of my all time favorite meals. Mmm I love it!

Here's the alfredo recipe I use in case you wanted to try another or whatever:

3 T. Butter
8 oz. Heavy cream
Salt to taste
1 Pinch Nutmeg
1/4 C. Grated Parmesan cheese
1/4 C. Grated Romano cheese
1 Egg yolk
2 T. grated Parmesan cheese

Melt butter, or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, parmesan & romano stirring constantly until melted then mix in egg yolk. Simmer over medium low heat for 3-5 minutes. Garnish with additional parmesan cheese, if desired.



I'd say watch your pinch of nutmeg though...because too big of a pinch will just make it all wrong..but otherwise, it's extremely delicious.

I was gonna say what Abby said! That is one of my all-time faves too! I order it at Olive Garden whenever I get to go. Yummy!
