Make a Meal Monday...

...a day late.

I wanted to get this posted last night, but I had a serious headache, so blogging was the last thing on my list. "Go to sleep" was a higher priority and it got done.

For dinner Sunday night, I made Mini Meatloaf...


...which I borrowed the idea from Laurie over at Treasure the Little Things. (She also just had a cute baby boy!) I didn't use her recipe though. Instead, I used my mother-in-laws which is as follows:

2lbs hamburger
1lb pork sausage
2 small cans tomato sauce
1C bread crumbs
1 egg
onion powder
garlic powder
salt
pepper

(I actually cut this recipe in 1/2 for this meal which was perfect for making 12 mini loaves.)

Combine all the ingredients. (By hand is the best method I've found of doing this.) Pat beef mixture into greased muffin tin. Use spoon to make a hole in the middle of each meatloaf. Pour bbq sauce or ketchup into each hole. Bake at 375° for 20 to 30 minutes or until meat is no longer pink. I used BBQ sauce but I think it would be perfect w/just some brown gravy. I think maybe I just added too much bbq sauce for my taste, but the actual meatloaf is good.

I loved the idea of using a muffin tin to make this meatloaf. It cooked in about 1/2 the time, which of course made my family happy! I think I will keep that idea and use it again and again.

The rolls were also homemade. They were the Lion House Rolls, which funny enough, I borrowed that recipe from Laurie also, back in July. (She's just got some yummy and good ideas! What can I say?) Here's the recipe for those...

Lion House Rolls

2 packages of yeast
1/2 cup warm water

1 1/3 cup milk, scalded and cooled
2 tablespoons butter
4 tablespoons sugar
1 teaspoon salt
2 eggs
2 cups flour (+ 3 cups flour to add later)

(Also very easy to cut in 1/2 and still get about 2 dozen.)

Combine 2 packages yeast and 1/2 cup warm water and set aside. In large mixing bowl combine remaining ingredients, mix until smooth. Stir in yeast. Add 3 cups flour and mix, knead until smooth and no longer sticky (you may need more flour). Place dough in greased bowl, cover with towel and set in warm place to raise until double in size (about 1 hour). Roll out and shape rolls, place on greased baking sheet.(for extra flavor, melt 1/2 stick of butter and pour onto baking sheet before placing shaped rolls) Cover rolls with towel and raise for 30 minutes. Bake at 400 degrees for 10-12 minutes, until lightly browned. Brush tops with melted butter,remove from baking sheet and cool on wire rack.


In other news...

The kids are on Fall Break this week. It's hard to keep them all entertained all the time. Fortunately the kittens are doing a good job of keeping them somewhat occupied. Rylie was having fun taking pics of them the other day...or so she thought...here's what I found when I uploaded to my computer last night...

And then...



I seriously was dying of laughter, which was not good for my headache. What ever happened to "Laughter is the best medicine!"?? That poor kitten! He cooperated perfectly though! I loved how candid it was, considering they had no clue that it was on video mode.

Camden lost his first tooth the other day...




I actually pulled it out for him. The first one that I've been successful at doing so. He was excited to find that the toothfairy did not forget him!

Lastly, Trenton is keeping up with not letting us down...



I am constantly finding him under his bed at night, asleep, when I know he's either fallen asleep on top of his bed, or was placed on his bed after falling asleep in the living room. What a goofy kid!

I didn't know my Mom had a meatloaf recipe! Hmm interesting.

Funny girls. Poor kitten, just waiting for his picture to be taken.

Congrats to Camden. He's getting so big. I just can't believe it.

Well, I got the recipe from her a while back when Josiah wanted some meatloaf and was remembering how much he liked hers, soooo, I can only assume it is hers.

Those rolls are so good! Man, dinner at your house always looks delicious!

I know I owe you the creamed ham recipe. One of these days I will remember to carry the cookbook upstairs when I'm coming to the computer. I promise!

And I make meatloaf the way my mother made it, so that one's no feeding its fourth generation. :o)

Cute little video clips! I guess now that they know how to take movies, you may be finding more and more!

And toothfaery congrats to Camden. How much is the old girl leaving these days?
