YUMMY Banana-oatmeal-chocolate chip cookies

Yesterday I had 3 bananas sitting in the kitchen getting rather spotty and no one here will eat them once they have that look. Usually I'll make some banana bread or muffins, (unless the motivation takes too long to kick in, then they just end up in the garbage!) but I wasn't really in the mood for bread. I was however, in the mood for some cookies so I googled banana cookies and I was succesful in finding a recipe. I usually put walnuts into my bread or muffins becuase that's just the way I like them. My kids however? Not so much. I substituted the walnuts w/chocolate chips instead and they turned out heavenly.



Banana Oatmeal Cookies w/Chocolate chips

1 1/2 cups all-purpose flour
1 cup sugar
1/2 tsp baking soda
1 tsp salt
3/4 tsp ground cinnamon
3/4 C shortening (I used butter flavored)
1 egg, beaten
1 C mashed ripe bananas (I always use a blender or food processor to puree the bananas)
1 3/4 C rolled oats
1 C semi-sweet chocolate chips

Preheat oven to 400°F.

In a large bowl, stir together the flour, sugar, baking soda, salt, & cinnamon. Cut in the shortening until almost no lumps remain. Stir in the egg and bananas; mix well. Stir in oats and chocolate chips. Drop by teaspoonfull 2" apart onto ungreased cookie sheets.

Bake for 12-13 minutes or until edges are browned. Remove from pans immediately to cool on wire racks.

They look fabulous. Maybe I'll give them a try this week. My bananas are getting on the verge!
